Anti-Inflammatory Thai Coconut Lime Green Smoothie

Today would have been my bridal shower. Sigh. I’d probably be on my first mimosa by now. I’d be taking in hugs and well-wishes (and opening awesome presents) from some the best women I know.

But today is different, like every day has been for the past three weeks. When I saw “Bridal Shower” pop up on my calendar this morning, I had a bit of a sad moment as I stared at the ceiling and realized there was nothing I could do that would make my bridal shower dreams come true today. I realized I could either: replace my bridal shower with the best pity party you’ve ever seen or make the most of the day that I have.

Instead of putting on my daily quarantine uniform of yoga pants and pouring a sad bowl of Cheerios, I decided that I was going to get dressed in real clothes. And so I made a very extra green smoothie recipe because life is still good, bridal shower or not, quarantine or not.

THE ESSENTIALS:

Any kind of milk, and neutral tasting greens (like kale, spinach or even zucchini) you have will do right now. The real key to making this more fun than your average green smoothie is the turmeric, ginger, mango and coconut. I’m always partial to a frozen banana because it gives your smoothie a creamier consistency, as well as some protein powder, chia and hemp seeds for extra nutrition, but it’s no sweat if you’re out of those. The Instacart struggle is real.

THE STEPS (SPOILER: THERE’S ONLY ONE)

Blend! It couldn’t be easier. My one smoothie hack is to blend everything without ice, add ice gradually and then continue blending for a minute or two longer than you think. You’ll get a creamier, more whipped consistency from the air pockets that work themselves into the smoothie.

Thai Coconut Lime Green Smoothie

Your classic green smoothie with a thai spin thanks to coconut, turmeric, ginger, lime and mango.

Ingredients

  • 1 thumb fresh ginger (or 1 tsp powdered)
  • 1/4 cup shredded coconut
  • 1 thumb fresh turmeric (or 1 tsp powdered)
  • 2/3 cup frozen mango chunks
  • 1 frozen banana
  • 1/4 tsp coconut extract
  • 1 cup almond milk
  • 2 stalks celery
  • 1 handful kale
  • 1 wedge lime
  • 1 scoop vanilla protein powder (optional)
  • 1 tbsp chia seeds (optional)
  • 1 tbsp hemp seeds (optional)
  • 1/2 cup ice

Instructions

  1. Add everything to a blender, blend and enjoy! Add more ice for a thicker consistency, or more lime for more tartness. Top with more coconut and frozen mango.
