Ingredients

  • 1 1/2 cups old fashioned oats
  • 1/2 cup garbanzo bean (chickpea) flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/2 cup melted coconut oil
  • 1/2 cup unsweetened creamy peanut butter
  • 1/2 cup coconut sugar
  • 1/4 cup maple syrup
  • 1 tbsp flaxseed meal
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350 degrees. Line a cookie sheet with parchment paper

  2. Make a flax egg. Combine 1 tbsp flaxseed meal and 2.5 tbsp warm water in a small bowl. Whisk with a fork to combine and let stand for 2-3 minutes to thicken.

  3. Combine oats, garbanzo (chickpea) flour, baking soda, salt and cinnamon in a large bowl. Whisk to combine.

  4. Combine peanut butter, brown sugar, melted coconut oil, maple syrup, vanilla and flax egg in a mixing bowl. Whisk or turn mixer on low to combine.

  5. Gradually add dry ingredients to wet ingredients. Mix until just combined.

  6. Use a large spoon or tablespoon to scoop out cookie dough and roll into golf ball sized pieces with your hands

  7. Bake on 350 until cookies are golden brown. About 8-10 minutes.

  8. Cool on a cookie sheet and get ready to be wowed!
